This is a 20 minutes dish. I make it kids friendly, and will have to adjust slightly so that the baby can eat it, as well. Will just feed about four people, Well, three and a half.
Start by cutting your Tofu block in cubes or stripes and let them dry on kitchen paper. While they sit there, mix olive oil, soy sauce, fresh coriander, black pepper and a little honey in a bowl. Don’t add salt, the soy sauce is salty enough. In fact, I only use a small splash of soy sauce so that the baby can have of it. Add the tofu cubes and soak them a little.
Heat your frying pan and roast a handful of sesame seeds. Then add sunflower oil and throw in your soaked tofu blocks. fry them hot and quick.
Turn off the heat, and add fresh edamame, and 200 grams of already cooked Udon noodles (I was in a hurry and bought them in the shop, shamefully).
Cook for about 3 minutes on medium heat, so that your sauce and the sesame seeds don’t burn. Then, I grab a good bit and put it on a cutting board where I chop it for the little one.
Now I can arrange the rest on plates. I sprinkle some bean sprouts on the parents’ serving. My toddler does not like them (yet) so I don’t add to his.
