Ok, again an easy one for the whole family. Quite healthy, tastes fresh and sells well to toddlers. You can make balls, rolls or patties. I do patties and call them “green hamburgers” so my kid eats it like there is no tomorrow. The whole dish takes about 3-4 hours but most of it is just waiting. You’ll see. Feeds 3.5 easy, you will probably have left overs for another light meal.
All you need is about 700 grams of frozen green peas, a tablespoon of olive oil, a bunch of fresh chopped mint, chopped and fried shallots, about 200 grams of crème fraiche and some seasoning. For the breading, you will need some flour, 2 eggs and breadcrumbs.
You want to mix all the ingredients except the green peas in a bowl. Separately, you crush the peas in the processor (don’t mash them, just split them by blitzing real quick). Then you throw them into your bowl with the other stuff and mix it all together.
Now you form your patties (or whatever shape you chose to make). I use those aluminium rings to make them even and my life easy. Put them on a oven plate that fits into your freezer, cover them and let them freeze for 2 hours. All done in a matter of 15 minutes.
Now you build your breading street: a plate with flour, a plate with 2 beaten eggs and a plate with your breadcrumbs. Take your frozen patties, move them from one plate to the next, cover them well, first with the flower, then with the egg and then with the breadcrumbs and set them aside, let them defrost for about an hour. That’s important to make sure they cook through afterwards.
Once done, fill a large frying pan with about 1.5 cm of vegetable oil. I use sunflower oil, it will not burn which is what counts. Now heat it up until it sizzles if you drop a little water into it. Lay your patties into it and fry them about 3-4 minutes each side. Don’t overfill the frying pan, fry your patties in small batches.
Aaaaand… you’re done! It is a nice and fresh meal, perfect for a summer evening. The mint and crème fraiche make it feel light and fresh. For the baby I just chop one of the patties up. The toddler can have it whole and just to make him happy and because I called it green hamburger, he can have it in a soft bun. He loves it!
